Preheat over to 350. Makes 36 cookies or so.
2 sticks unsalted butter at room temperature
3/4 cup light brown sugar
1/2 teaspoon salt
1 teaspoon vanilla (Madagascar Bourbon Vanilla)
1/4 cup sugar
1 large egg
2 cup flour
1/2 teaspoon baking soda
1-2 cups dried cherries (1/2 lb bag is approx 2 cups)
12 oz dark chocolate chips (I use 18 oz because I like more chunks)
2 cup pecan halves (reserve about 36 and chop the rest)
1-2 Tablespoons of Bourbon
Cream together butter and brown sugar
Add salt and vanilla. Stir.
Add sugar and egg. Beat until fluffy (about 4 minutes)
In separate bowl, whisk flour and baking soda.
Slowly add dry stuff (flour mix) to wet stuff (butter, brown sugar, egg mixture). Mix just until combined.
Fold in dried cherries, chocolate chips, and pecans.
Using a 1 oz scoop or big tablespoon, plop 6 or so cookies per cookie sheet. Press one pecan half on top.
Bake at 350F approximately 11 minutes. Watch closely towards the end.
Leave on cookie sheet for 1-2 minutes before transferring to rack to cool.
